Lively Oats

Serves 4

Soaking the oats overnight make them super fast to cook, and when soaked in water with whey their digestibility is like no other porridge you’ve eaten!

 

1 ½ cups Organic whole steel cut oats
2 tbsp whole linseed
½ tsp natural salt
2 cups of cold filtered water
3 tbsp whey (optional - see note below)  

Add all ingredients to a pot and cover and soak overnight.

Gently simmer on low heat until cooked through, you may need to add more water.

Serve with fresh whole milk and a sprinkle of rapadura sugar if desired.  

Variations:

Add finely chopped dried fruit such as organic apricots or raisins.

Make sure your fruit is free of preservative suphur dioxide (the preservative that keep apricots orange).  

Top with fresh LSA : ground linseed, sunflower seed and almond. Available at Piko Wholefoods, Kimore Street, CHCH
