Monkfish Salad

 

Prep time 5 mins
Marinating time minimum of 3 hours  

This is a fabulously easy & impressive dish to serve as an entrée or as a light lunch.  Better still, it’s extremely healthy! 

1-2 fillets of Monk Fish
4 Limes
1 tin organic coconut milk
Pinch salt  

Thinly sliver the monkfish into small bite size pieces & place in small bowl, cover with the juice of the limes & mix in the coconut milk & salt.

Cover & refrigerate for around three hours.  

Serve in a cocktail glass with a wedge of lime and a slice of rock melon.

Thai Green Salad

1 leafy green lettuce or mixed garden greens, rinsed and well drained (Rocket works well)
Bunch spring onions cut into 1 inch pieces on an angle
½ cucumber sliced into fingers
handful of edible flowers like pansies or nasturtiums

Salad dressing
¼ cup coconut milk
juice of one lime
1-2 tbsp fish sauce
1-3 cloves crushed garlic
1 tsp brown sugar
1 freshly minced seeded red chili

Serve with Monkfish salad
