Pesto

 

Pesto is the Italian word for paste.  Any combination of herbs & nuts can be made into
yummy highly nutritious condiments that can be added to fresh pasta.  Use on antipasto
platters or how I love to eat them, on millet & rice Cruskits with a slice of smoked chicken & avocado.   

Don’t buy pesto, grab a fresh bunch of your favorite herb & whiz one up, its much better fresher & more economical.  You’ll be able to make 2-4 times the amount for the same price.  

Basil is high in iron, calcium & vitamin A. Ehen vitamin A is combined with oil, it makes it more absorbable in the body.   Basil also contains flavonoids, which protect cell structures as well as chromosomes from radiation and oxygen-based damage.  

2-3 cups of packed sweet basil (1-2 supermarket bunches)
1/2 cup cold pressed olive oil
1/2 cup of pinenuts or cashews
1/4 cup of grated dried parmesan
3-5 cloves of garlic
good pinch of salt  

Stick it all in a blender & whiz it up.  Add more or less olive oil to get a nice smooth

Wet consistency.

Tip:  Baby spinach leaves can be used with basil to make a milder more economical version.
