Debs Delicious Jelly

This is an amazing desert and will become a regular in your household.
Its not only sugar free, its sweet & healthy. 
 

1 litre of organic apple juice (clear juice is best if you want a clear jelly)
6 tablespoons Agar flakes 
1-2 cups frozen ir fresh berries

Mix together in a pot & bring to boil, simmer for five mins, stirring occasionally, until agar is completely dissolved.  Pour over 1-2 cups of frozen fruit laid out in a shallow dish. White is best to show its beautiful colours.

Leave to cool & set.  It will take about an hour in the fridge, best made 1-2 hours ahead of time.

 I like to boil in raspberries to give it a lovely red look, Just add to pot at the beginning.  You could boil in any berries to give a different colour.  A good tip if you choose to do this, is to strain the jelly to get rid of the seeds from the berries. 

Any frozen or fresh fruit can be used with a drop of imagination! Try slices of apple, berries, fresh pieces of bananas, kiwi fruit, pineapple...  

Gelatine is made from tendons, ligaments, cartilage & the hide of horses, pigs, & cattle.   I prefer to use Agar flakes as the end product is much nicer!  Agar is a sea vegetable made from the cell walls of red algae.  

Like the other sea vegetables, agar is a good source of iodine (100 grams agar has 160 milligrams of iodine), as well as some calcium and iron. It has no calories, and according to Paul Pitchford (Healing With Wholefoods), agar promotes digestion and weight loss, treats haemorrhoids, and carries toxic and radioactive waste out of the body. It is cooling in nature, and reduces inflammations and other heat conditions as described in traditional Chinese medicine.
