Thai Kumara Soup

Thai Kumara Soup

This is a fabulous soup that’s quick and simply to prepare.   

4 large orange kumara
Good pinch of salt
1 tablespoon coconut oil
2 large onions, diced
4 tablespoons red curry paste (more if you like it hot)
1 tin organic coconut cream  

Peel and chop up the kumara (if they are fresh and the skin looks good then scrub and keep them on), boil until just cooked, strain, mash and set aside. 

In a large saucepan fry onions in oil until clear, add curry paste and stir through for a minute, then add the kumara and coconut milk.  Heat through until all ingredients are hot the flavours have combined adding hot water to reach desired consistency. 

Garnish with fresh coriander or a pile of fresh chopped parsley, Serve with fresh focaccia bread or a wholesome grainy bread.
