Herby Quinoa Taboulleh

  

 

Prep time 5 mins with precooked quinoa

 

My entire family devoured this and begged for more!  Quinoa (pronounced keenwa) is the ancient grain of the Incas. It is a unique grain because it is higher in protein than carbohydrate.  It's also a complete protein so is a vital addition to any vegetarian or vegan diet.  It cooks like rice and you use it exactly like rice.  It comes in red or plain varieties.  Click here to order.

Parsley if great for fluid retention and weight loss, and is high in iron.

This is a pretty dish to serve and it’s flavour is a fresh burst of spring!

 

1 Large bunch parsley

1 large bunch mint

1 large bunch corriander

2 cups cooked quinoa (1 cup uncooked, cooked)

Juice of 1-2 lemons

¼ cup olive oil to taste

1 tsp finely grated lemon zest

Splash of agave or organic maple syrup to taste

1-2 cups cherry toms, sliced into bite size pieces

1 cup organic peanuts, Ceres toasted and salted are fabulous.

Salt and freshly ground pepper to taste

 

Finely mince all the herbs, Combine and enjoy!
